We all know that our cats influence our lives in unexpected ways, but for bar owner Ravi DeRossi, a cat inspired him to make a major change in his life.
DeRossi owns multiple bars and eateries including Riddling Window and Death & Co. One of his restaurants, Avant Garden, opened in the fall of 2015 and is now an acclaimed vegan restaurant. But DeRossi’s other bars and restaurants feature different menus and don’t follow the vegan guidelines.
That’s about to change, though, thanks to a special cat. DeRossi’s cat, Simon, was diagnosed with a terminal illness last year. DeRossi cleared his schedule and stayed home with Simon, along with his other 2 dogs and 3 cats, all rescues. While Simon was sick, DeRossi started to keep journals. Those journals turned into a bit of a manifesto, and as DeRossi reflected on the path that his life had taken, he came to a major decision. On Christmas day, he decided that it was time to convert his restaurants to vegan.
It’s no small task, and DeRossi began with his restaurant, Mother of Pearl. The change required entirely new menus, both for the food and for the drinks served at the bar. But with Mother of Pearl now serving an entirely vegan menu, DeRossi plans to continue to renew and revise his existing restaurants.
And to think, such a major change was inspired all because DeRossi stayed home to care for his ailing cat.
